The Corboli farmstead is situated just above the village of San Quirico di Vernio in the foothills of the Tuscan-Emilian Appenines. The food we offer reflects that which is locally grown and eaten, grown either on the farm itself or nearby. It is cooked in the local style and served around large tables. Delicacies include salamis and roasts prepared with our own Sienese Belted pigs, various cuts of Calvana beef, wild boar, chestnut flour tagliatelle, potato cakes, Prato style celery, bread soup, Tuscan pecorino cheese [made with sheep’s milk] with chestnut honey, plus our own homegrown vegetables. We make our own biscuits and also a savoury focaccia. The wine we serve is the splendid Carmignano table wine.
